Although it is more than sixty years since Giustino Bisol established the winery, the founder’s vision to promote Prosecco and Cartizze is still very much alive. Today Paolo Bisol is at the helm, assisted by his children, Giustino and Isabella, who are taking an increasingly active role in the business. They are committed to production, which is mainly based on the relationship of trust and collaboration they have built up with the hundred or so vine-growers who are the driving force behind the business. The winery is structured to receive and immediately divide up the large quantities of grapes that arrive during the harvest. Once again this year the Bisol family’s sparkling wines are some of the best in the appellation, Giustino B being a good example of this. First produced in 1995 to celebrate the fiftieth anniversary of the father’s business, nearly twenty years on production and quality are both higher and this year it once again delivers a sophisticated bouquet and a tasty, elegant flavour. Production of Vecchie Viti is more limited, an edgy Brut with a great personality.
