This wine is delicately sparkling light pink in colour with a subtle and constant perlage. The aroma is fresh, very fine and persistent with hints of small red fruits and mineral as well as floral notes. The flavour is dry, pleasantly fresh and zesty with a very harmonious structure.
Variety: Pinot Nero.
Location: from the best vineyards in the province of Treviso.
Harvest: September.
Vinification: off the skins except for partial contact with the skins at 18°C. Slow second refermentation in large sealed vats at 14-15°C followed by resting on the lees for around 3 months.
Bottle pressure: 5.5 atm.
Sugar residue: 7 g/l.
Alcohol: 12%.
Serving temperature: 5-7°C. Open immediately before serving.
Pairings: this wine goes very well with hors d’oeuvres of cold cuts and dry first courses. Exceptional with fish soups as well as with roast white meats and mushrooms.
